Soak cashews in water for 2 hours; drain and rinse. Soaking the cashews will make the dressing creamier as well as make the cashews more digestible.
Add all ingredients to a high speed blender. Process until creamy. If the dressing is too thick, add some more water a tablespoon at a time until the right consistency is reached.
Dressing can be stored in a sealed jar in the refrigerator for up to a week.
