Traditional Caesar dressing contains animal-based products such as eggs, Worcestershire sauce, parmesan cheese and anchovies. It also usually contains a lot of processed oil.
This oil-free Caesar salad dressing uses only whole foods. It utilizes rich plant based foods such miso paste, tamari and dulse to create a similar flavour to the original version. The combination of cashews and hemp seeds provides a good balance of healthy fats from whole sources. Cashews and hemp seeds are whole foods and, therefore, include vitamins, minerals and fibre that have been stripped out of oil.

Ingredients
- 2 garlic cloves, large
- 2 tbsp lemon juice
- 2 tbsp white wine vinegar
- 1 tbsp dijon mustard
- 2 tbsp capers in brine
- 1 tbsp white miso
- 1 tsp tamari
- 1 tsp dulse flakes
- 1/4 cup hemp seeds
- 1/4 cup cashews
- 1/3 cup water
Instructions
- Soak cashews in water for 2 hours; drain and rinse. Soaking the cashews will make the dressing creamier as well as make the cashews more digestible.
- Add all ingredients to a high speed blender. Process until creamy. If the dressing is too thick, add some more water a tablespoon at a time until the right consistency is reached.
- Dressing can be stored in a sealed jar in the refrigerator for up to a week.
